Do you know what Polenta is? Polenta comes from Italy, that traditional food is made by cornmeal. It seems to be Italian staple food or quite popular garnish. One day, I went to a grocery store at Commercial Dr with my friend. Commercial Dr is known as a little Italy in Vancouver. There are many espresso bars, pizza places, and Italian grocery stores for not only Italian, but also Canadian and people from other countries. My friend showed me a yellow food which is wrapped with vinyl and looks like a big sausage, at the grocery. I saw the polenta for the first time. She is Spanish, but she had not tried it yet too, we bought one of the prepared polentas. After few weeks later, I just remembered what I bought (I let it sat for a while:)) and started cooking!

ポレンタをご存知ですか。イタリア発祥のコーンミールで出来ている伝統的な食べ物で、いわば主食や必ずある付け合わせのようなもの。私は日本にいた頃見たことも聞いたこともなかったから、ある日友達と訪れた、コマーシャルドライブのグロサリーストア(ここはリトルイタリーとしてバンクーバーでは知られているエリア)でポレンタについて聞いて、どうもうまく想像が出来なかった。どういう部類の食品に属するのか、あやふやだった。既製品のポレンタは、黄色くて、大きなウインナーのような形にビニールで包まれていた。教えてくれた友達はスペイン人だったけれど、同じくポレンタを食べたことがない、と言っていたので早速買ってみた。私が買ったのは750gの四角くビニールでパックされているもの。買った後しばらく放置していて、ふと思い出したので料理開始!

ポレンタをグラタンの一番下の土台に使ってみたよ!ちなみに、グラタンと言っているけれど日本語で適当な言葉が思い浮かばないだけで、これは典型的なグラタンではありません。オーブン焼みたいな感じかな?

Ingredients
材料




500g prepared polenta / 調理済みポレンタ……500g

1 tbsp olive oil / オリーブオイル……大さじ1
1/3 zucchini / ズッキーニ……1/3本
1/3 onion / たまねぎ……1/3個
3 mushrooms / マッシュルーム3つ
1 clove of garlic / にんにく……1片
30g ham or bacon / ハムもしくはベーコン……30g
250ml (1cup) tomato sauce / トマトソース……250ml
10 fresh basil leaves / バジルの葉……10枚
70g cheddar cheese / チェダーチーズ……70g



Preheat a oven 400F (200℃), cut polenta into each slices about 1cm. Cover the bottom of a casserole  (or a gratin dish) with the slices of the polenta, bake it for 15minutes in the oven.
Heat a pan with olive oil, saute sliced mushrooms and sliced onion until become golden brown, set aside. In the same pan, saute 5mm sliced zucchini lightly. Remove the polenta from the oven, heat down the oven to 340F (170℃). Place the mushrooms and onion on the polenta, and place zucchini on it. Fill up the space evenly on zucchini with tomato sauce, layer ham and basil leaves. Put cheddar cheese on the top. Bake it in the oven for 25minutes until the surface becomes golden brown.



オーブンを200℃ (400F )に予熱しておく。ポレンタを約1cmにスライスする。キャセロール、もしくはグラタン皿の底にポレンタを敷き詰め、オーブンで約15分焼く。
フライパンでオリーブオイルを熱し、スライスしたマッシュルームと玉ねぎをきつね色になるまで炒める。それらが終わったら皿に取り出しておき、同じフライパンで約5mmにスライスしたズッキーニも軽く炒める。オーブンから取り出したポレンタの上に、炒めたマッシュルームと玉ねぎ、さらにその上にズッキーニを重ねる。オーブンを170℃ (340F)に下げておく。ズッキーニの隙間を埋めるように、平らにトマトソースを流し込み、ハムとバジルをのせたら一番上にチェダーチーズをのせて、オーブンで170℃25分、表面がきつね色になったら出来上がり。


This time I didn't use salt, because the polenta contains salt, also tomato sauce and cheddar cheese make it a bit salty. It's up to you if you add salt or pepper.

今回は塩を使いませんでした。ポレンタも少ししょっぱいし、トマトソースやチェダーチーズも塩気があるので、お好みで塩こしょう、加減してください。

Actually, this time was my second time to try swiss chard, which is unknown vegetable in Japan. This is very common as a nutritious vegetable here, in Canada. Rainbow swiss chard, you look amazing! 

実はこれでスイスチャードに挑戦するのは2回目。今まで日本でスイスチャードなんて聞いたことも見たこともなかったけど、ここカナダでは結構スタンダードな栄養のある野菜。とくにレインボースイスチャードはとってもきれい!




Recipe
1 casserole / キャセロール一台分
Serving for 8
八人分
Ingredients
材料

For filling / キッシュの中身

1bunch of Swiss chard / スイスチャード……1束
1 yukon potato / じゃがいも……大1個
1/2 cup black beans / ブラックビーンズ……125ml
1/2 cup chick peas / ひよこ豆……125ml
1/2 onion / 玉ねぎ……1/2個
2 cloves garlic / にんにく……2個
1 tbsp olive oil / オリーブオイル……大さじ1
salt and pepper to taste / 塩こしょう……少々

For egg mixture / 卵液

3eggs / 卵……3個
1/2 cup gruyere cheese / グリュイエルチーズ……125ml

1 tsp rosemary / ローズマリー……小さじ1
olive oil / オリーブオイル

If you use dried beans, soak the beans overnight in water, then rinse and boil it to soften.
乾燥豆を使う場合は、前日の夜から水につけておき、料理する前に軽く洗ってやわらかく煮ておく。


Chop swiss chard and potato into 1cm, mince onion and garlic. Heat a pan with olive oil, put garlic, onion, stalks of chard, and potato, sprinkle salt and pepper. Saute those until done, add leaves of chard, black beans, and chick peas, saute about 5minutes. 

スイスチャードとじゃがいもは1cm角に切り、にんにくと玉ねぎはみじん切りする。フライパンにオリーブオイルをあたため、にんにくを入れる。玉ねぎ、チャードの茎の部分、じゃがいもも入れて塩こしょうする。大体炒められたら、チャードの葉部分と豆類を入れ、さらに約5分炒める。







Preheat oven to 380˚F / 190˚C.
Beat eggs in a bowl, add  ground gruyere cheese, and mix together with the filling. Pour the mixture into a casserole, sprinkle rosemary, and drizzle olive oil on it. In oven, bake it for 40minutes.

オーブンを190˚Cに予熱しておく。
卵をボウルに割り入れ、混ぜる。削ったグリュイエルチーズも加える。この卵液と先ほどの炒めた野菜たちを一緒にし、キャセロールに流し込む。ローズマリーを散らし、オリーブオイルを少々たらしたら、オーブンで約40分焼く。

Salmon chowder

Ingredients
材料

* Preparation the salmon*

200g salmon / サーモン……200g
1 bay leaf / ローリエ……1枚
1 tbsp of sake or white wine / 日本酒……大さじ1
1 pinch of Salt and pepper / 塩こしょう……少々

* For chowder*

4 big leaves chinese cabbage ( napa cabbage) / 白菜……大きめの葉4枚
1 bunch of Enoki mushroom / えのき……1房
1/2 onion / 玉ねぎ……1/2個
1 tbsp butter / バター……大さじ1
1 cup soup ( vegetable soup stock) / スープ(野菜スープだし)……250ml
50ml cream cheese / クリームチーズ……50ml
1 cup soy milk / 豆乳……250ml




First, place the salmon on a sheet of aluminum foil, sprinkle sake, salt and pepper, put a bay leaf on the salmon, and wrap it with the aluminum foil. Steam it until it becomes pale pink inside, about 10 minutes.

はじめにサーモンをアルミホイルに並べ、酒と塩こしょうをふりローリエをのせる。アルミホイルで包んだら、サーモンが中までうすいピンク色になるまで大体10分蒸す。





Heat a pot, saute the vegetable with butter until softened, then pour soup on it and put steamed salmon, simmer for 5 minutes. Add cream cheese and soy milk, simmer another 5 minutes.

鍋を熱し、野菜をバターでやわらかくなるまで炒める。そこにスープと蒸したサーモンを加え、弱火で5分煮る。クリームチーズ、豆乳も加えてさらに5分煮る。 


I like to eat the salmon chowder with bread, as I soak a piece of baguette in the chowder, or pour the chowder into a bread bowl with cheese on it. It should be melted in oven, maks my mouth water! :9
