I am thankful for....Happy thanks giving potluck party with lovely friends!
It was my first thanks giving in my life, we don't have thanks giving day in Japan, though we have other opportunities to respect for the elderly, labor, peace, and so on. I heard that they celebrate Thanks giving day with Turkey and pumpkin pie, here in Canada. As I was invited to thanks giving potluck party, my friend requested me to make pumpkin soup. I got a whole kabocha squash which is the most popular squash in Japan, and tried to make kabocha squash soup in the kabocha shell.

友達のポットラックパーティーに呼ばれて、みんな一人ずつ感謝しているものにありがとう、とそれぞれ順番に言った。それは少し照れくさいけど、とてもしあわせな空気で満たされる瞬間だった。何かにありがとうと、あらためて口にするのはいい文化だな。カナダではターキー(七面鳥)とパンプキンパイでお祝いするのが古くからの習慣なようだけれど、友達にリクエストされて私はかぼちゃのスープを作ることになった。かぼちゃのお椀作りにも挑戦。




Whenever I make something with a whole squash, I struggle to cut in it. It is too hard to chop. This time, it must have been harder than as usual, because I shouldn't hurt the peel and cut in it with all my might to keep the shell shape. First, I roasted the whole kabocha squash in an oven, 170℃ for 30minutes before scoop out the fruites, though it seemed that too much time I roast it for keeping the shell shape. It must be needed to keep an eye out for how much tender it is. 

いつも、丸ごとのかぼちゃを調理するのに苦労する。皮がとても硬くて、簡単に包丁は入らないし、心して取り組まなければいけない。今回はかぼちゃの外側を丸ごと残しておきたかったので、力任せに切るわけにはいかず、いつも以上に大変だった。まず始めに、実をくりぬくために、170℃のオーブンで30分間、丸ごとのかぼちゃを加熱したけれど、少し時間が長かったようで、くりぬくとき外側の皮が崩れかけました。常にオーブンの中のかぼちゃが、どの程度やわらかいか、様子を見るのは大切。

Ingredients
材料


A whole kabocha squash / かぼちゃ……丸一個
1/2 onion / たまねぎ……1/2個
2 cup vegetable stock / 野菜スープストック……500ml
1 tbsp butter / バター……大さじ1
2 cloves of garlic / にんにく……2片
1 tsp fresh ginger / 生姜……小さじ1 
1 tbsp turmeric / ターメリック……大さじ1
1pinch cayenne pepper / カイエンペッパー……ひとつまみ
Salt and pepper to taste / 塩こしょう……少々
2 tbsp cilantro / パクチー……大さじ2
1 cup milk / 牛乳……250ml





To make easy to scoop out the fruites, roast the whole kabocha squash in an oven, or warm up in a microwave until become soft. This time, I used the oven at 170℃ for 30minutes to make soft. Cut off the part of around the calyx, scoop out the fruites and mush, discard seeds. Mince garlic and ginger, chop cilantro, slice up the onion. 

かぼちゃの中身をくりぬきやすくするため、オーブンか電子レンジで少しやわらかくなるまで温める。今回は170℃で30分、オーブンを使いました。それから頭のへたの周りを切り取って、中身をくりぬき、実をつぶす。種やわたは捨てる。にんにく、生姜はみじん切り、パクチーは刻んで、玉ねぎはスライスする。

Heat a pan with butter, saute the onion until slightly brown, add the kabocha fruites, garlic, ginger, cayenne, and turmeric. Then add vegetable stock, season with salt and pepper, stew until blended to perfection. Sprinkle cilantro. If you prefer milder soup, add milk. Arrange soup in the squash shell:) The taste is Autumn. 

フライパンを熱してバターを溶かし、たまねぎを少し茶色くなるまで炒める。かぼちゃの実とにんにく、生姜、ターメリック、カイエンペッパーを加える。野菜スープストックを加えて塩こしょうで味を整え、完全に混ざるまで弱火でことこと煮込む。刻んだパクチーをふりかける。もう少しマイルドにしたかったら、牛乳を加えてください。スープをかぼちゃの器に入れて、できあがり。秋のごちそう。

Ingredients
材料

* Preparation the salmon*

200g salmon / サーモン……200g
1 bay leaf / ローリエ……1枚
1 tbsp of sake or white wine / 日本酒……大さじ1
1 pinch of Salt and pepper / 塩こしょう……少々

* For chowder*

4 big leaves chinese cabbage ( napa cabbage) / 白菜……大きめの葉4枚
1 bunch of Enoki mushroom / えのき……1房
1/2 onion / 玉ねぎ……1/2個
1 tbsp butter / バター……大さじ1
1 cup soup ( vegetable soup stock) / スープ(野菜スープだし)……250ml
50ml cream cheese / クリームチーズ……50ml
1 cup soy milk / 豆乳……250ml




First, place the salmon on a sheet of aluminum foil, sprinkle sake, salt and pepper, put a bay leaf on the salmon, and wrap it with the aluminum foil. Steam it until it becomes pale pink inside, about 10 minutes.

はじめにサーモンをアルミホイルに並べ、酒と塩こしょうをふりローリエをのせる。アルミホイルで包んだら、サーモンが中までうすいピンク色になるまで大体10分蒸す。





Heat a pot, saute the vegetable with butter until softened, then pour soup on it and put steamed salmon, simmer for 5 minutes. Add cream cheese and soy milk, simmer another 5 minutes.

鍋を熱し、野菜をバターでやわらかくなるまで炒める。そこにスープと蒸したサーモンを加え、弱火で5分煮る。クリームチーズ、豆乳も加えてさらに5分煮る。 


I like to eat the salmon chowder with bread, as I soak a piece of baguette in the chowder, or pour the chowder into a bread bowl with cheese on it. It should be melted in oven, maks my mouth water! :9

サーモンチャウダーはパンと一緒に食べるのがいい。バゲッドを浸しながら食べたり、たまにはパンの器にサーモンチャウダーを入れてチーズをトッピング、オーブンで焼く。よだれが出るね:9

Nowadays, it is popular that hot pot is made by soy milk in Japan, I wanted to try it here, Canada at the beginning of Autumn. I had Siitake mushroom, and Enoki mushroom. These remind me to have feeling something Autumn taste! Just there was left over soup stock for rice with vegetables from the day before night. I decided to make soy milk soup with that stock! It was really thick taste, and nutrition. It met my expectations:)


最近日本では豆乳鍋が当たり前の"鍋"の選択肢として主流になっている。久しぶりにカナダでも食べたくなって、秋の味覚、きのこと前日に作った炊き込みご飯の残りのだし汁で豆乳スープを作ることにした。とっても濃くて栄養満点のスープ、期待通りの味:)

Ingredients
材料


1 bunch Spinach / ほうれん草……一束
1/2 yukon potato / じゃがいも……1個
4 shiitake mushrooms / しいたけ……4個
1/2 bunch enoki mushrooms / えのき……1/2束
300ml soy milk / 豆乳……300ml

for soup stock 
だし

150ml "dashi" Japanese soup stock / だし……150ml
1tbsp "mirin" Sweet sake (for seasoning) / みりん……大さじ1
1tbsp soy sauce / しょうゆ……大さじ1


Slice potato and soak with water, cut the spinach and enoki mushrooms into 5cm, slice shiitake mushrooms. In a pot, put potato and pour water over them till they are just barely covered, then boil until potato becomes soft.

じゃがいもはスライスし水につけておく。ほうれん草とえのきは5cmくらいの長さに切り、しいたけはスライスする。鍋にじゃがいもと水をそれが隠れるくらいに入れ、じゃがいもがやわらかくなるまで火にかける。

Add soup stock, shiitake and enoki mushrooms, simmer for 5minutes, then add spinach and soy milk. Simmer another 5 minutes.

だしを鍋に加え、しいたけとえのきも加えて約5分煮る。ほうれん草、豆乳も加えてさらに5分煮る。

Gazpacho

Ingredients
材料

2 cups tomatos juice / トマトジュース…2カップ
1 cup tomato / トマト…1カップ
10 oz of bread / パン…280g
1/2 red onion / レッドオニオン…1/2個
1/2 zucchini / ズッキーニ…1/2本
1/2 clove garlic / にんにく…1/2片
7 tbs olive oil / オリーブオイル…大さじ7
1&1/2 tbs fresh lime juice / ライム果汁…大さじ1と1/2
1 tbs red wine vinegar / レッドワインビネガー…大さじ1
2 tbs fresh parsley / パセリ…大さじ2
1/2 tsp white sugar / 砂糖…小さじ1/2

Cumin, salt and pepper to taste / クミン、塩こしょう…少々

In a food processor, combine all ingredients until well-combined, but still chunky. Cool completely in fridge, ideally, cooked in the day before serving should be better.
Optional, serving with parmigiano, parsley, and cucumber. 

フードプロセッサーにすべての材料を入れ、混ぜる。わずかに形が残るくらいまで。冷蔵庫で完全に冷やす。できれば前日に作って一晩寝かした方が、味が落ち着いておいしい。お好みで、パルメザン、パセリ、キュウリなどをのせてサーブする。
